
1 cup of uncooked rice
1 tsp of butter
1 clove of garlic or garlic powder
1 tsp of lime juice
1 15 oz can of chicken broth
1 cup of water
Bring to boil, cover, reduce heat to low, and continue to cook for 15-20 minutes. Until done.
Bowl combine
1 Tbsp of lime juice
1 1/2 tsp of sugar
3 Tbsp of cilantro
Mix
When rice is done pour ingredients in bowl over the top and fluff the rice.
Serve on a tortilla with diced tomatoes, cut avacados, lettuce, black beans and rice above. Yummy.

tomato, onion and cheese swirls - makes 16 swirls
2 cups flour
1 tbsp baking powder
1/2 tsp salt
1 1/2 tsp dried basil
1 stick butter
3/4 cup milk
Combine flour, baking powder and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs.
Add dried basil. Stir, adding enough milk to form soft dough.
Turn out onto lightly floured surface. Knead gently until dough just comes together.
Gently roll out on waxed paper to 15 x 7 inch rectangle.
filling
75 gms tomato paste
1/2 tbsp sugar
1 garlic clove, minced
1 medium onion, finely chopped
1 tbsp oil
1 cup cheese
4 tbsp water
Heat oil in small frying pan on medium. Add onion. stirring often until onion is softened. add garlic and stir until fragrant.
Add tomato paste, water and sugar stir well. Season with salt and pepper. Let cook for about 5 minutes.
Spread tomato filling over dough, sprinkle cheese. Roll up jam roll-style. from long side using waxed paper as guide. pinch seam against roll to seal.
Cut dough into 16 slices. Arrange slices cut side down about 1 1/2 inches apart, on a greased baking tray.
Bake in 180C for 15-20 minutes, until golden.
Serve warm.
